Cooking With Jordan #25 Crescent Cookies

WOW, it has been a loooong time since J and I did a Cooking with Jordan episode.

She and I went to lunch on Monday and really just kind of reconnected.

Being a teenager is hard.

She and I had a MAJOR heart to heart and she said she missed the "good times" we use to have together and that she was "sorry for being so mean and saying not nice things" lately.

So we came home, looked in the pantry and fridge and put together a fun new and easy recipe.

This one is YUMMY and super easy.

Nutella Crescent Cookies
open up any refrigerator crescent rolls and preheat oven
according to directions on package
press ONE side of triangle in sugar...we used Splenda, no sugar in the house
spread a nice thin layer of nutella on unsugared side of triangle
Roll up triangle from base to point
"clean" the knife
place on parchment paper covered cookie sheet
bake according to directions on crescent roll package
while they bake play with puppy until she falls asleep
don't bother placing golden brown crescent cookies on a cute dish to serve
enjoy while standing around stove in kitchen
get thumbs up for deliciousness from cousin Tyler
the chef/baker/cook herself
big thumbs up from Mamarazzi
mmmmm good from Big Daddy
and a final thumbs up as they disappear...YUM!

Cooking with Jordan! #24 Turkey Meatloaf

Sheesh, what a loser blogger I am. AND the reason I am posting this one is because my friend Kristi (holla!) requested it...YES J's fans have spoken, more recipes to come soon!

Today's recipe is Turkey Meatloaf...this is one of our favorite things that Big Daddy makes. He is a great cook and loves to teach J what he knows, check out Cooking(?) with Daddy, fantastic!!

Turkey Meatloaf

1 pound ground turkey, 2 eggs1 cup quick oats
1/2 cup chopped onion
fresh ground pepper and garlic salt 1/4 cp BBQ sauce or marinade of choice(we like Dale's but can only get it in the south, we have connections)
we have used regular BBQ sauce before and it's yum
mix well using your hands...ew squiiiishy
pat firmly into loaf pan
pour 2/3 cp milk over top (this keeps it moist)
I swear these two are nuts...total hams!
cover with foil and bake @ 350 for about 1 hour (or until instant read thermo reads 160)

take off foil and cook for 10 min uncovered. Allow to rest for 10-15 min before serving. we also love to add carrots, bell peppers and even brocolli and squash, great way to "hide" veggies from your picky eaters...so glad I don't have one of those!!

I totally forgot to take a picture of the finish product...guess we were hungry. Trust me it was YUMMY!!

Cooking with Jordan! #23 Chicken Enchiladas on the Fly

Time for another episode of Cooking with Jordan. I cannot believe the last one was in MAY...I have a few ready to make into posts but who has the time for blogging these days...not me. But J was asking about her Cooking with Jordan Episodes so I will make time for her...and her fans.

On today's menu Chicken Enchiladas on the Fly...this is most def a go to pantry meal. Easy and delicious. I always make enough for two pans, separate them by twos into Ziploc bags and freeze them...they reheat beautifully and are perfect for a quick lunch or do it yourself dinner nights.


Chicken Enchiladas on the Fly

Chop one oniontry not to CRY...she had tears streaming down her face
saute onion in TB of Olive Oil until golden
open and drain *canned chicken
add chicken to sauteed onions
cube one brick of cream cheese
add cream cheese to chicken and onion
season with garlic salt (we can't cook with out it) and pepper she looooooves to cook
spoon enchilada sauce into bottom of dish
heat tortillas 3 at a time for 1 min in microwave (this makes them soft)
work quickly filling the tortillas with chicken mixture and a little cheese
roll and lay in pan (btw we like white corn tortillas but they all work)adorable video demonstration by J

repeat until pan is full add sauce on top
sprinkle with cheese
bake @ 350 for 30 min serve with a yummy salad and a smile

* this recipe is also amazing with leftover rotisserie chicken. We use canned chicken a lot just because we always have it on hand and it is still soooooo good. Try it your family will love it!Photobucket

I found this one in a draft folder...I never posted it, and it's from FEBRUARY! craaaaazy!

Cream Cheese Chicken and Rice (crockpot style)
4-6 pieces of chicken (we like breasts for this)
1 package of dry ranch dressing mix
1/2 cups water
cook 3-4 hrs or until done on med high shred chicken
(use a liner for this recipe...i forgot)
combine 1 brick cream cheese,
1 can cream of chicken soup
1 cup of milk
season with pepper and garlic salt
(as you know we don't know how to cook w/out it)
dried parsley for color
blend until smooth
pour over chicken and blend
yummy over rice with a salad
