Cooking with Jordan! #23 Chicken Enchiladas on the Fly

Time for another episode of Cooking with Jordan. I cannot believe the last one was in MAY...I have a few ready to make into posts but who has the time for blogging these days...not me. But J was asking about her Cooking with Jordan Episodes so I will make time for her...and her fans.

The whole point of the cooking lessons for J is to show her some basic easy meals, teach her how to plan a menu, learn how to follow a recipe and help her become more comfortable in the kitchen...this is not anything totally gourmet or culinary school worthy. We hope you enjoy Cooking With Jordan and try these recipes with your kids. They are totally J approved!

On today's menu Chicken Enchiladas on the Fly...this is most def a go to pantry meal. Easy and delicious. I always make enough for two pans, separate them by twos into Ziploc bags and freeze them...they reheat beautifully and are perfect for a quick lunch or do it yourself dinner nights.


Chicken Enchiladas on the Fly

Chop one oniontry not to CRY...she had tears streaming down her face
saute onion in TB of Olive Oil until golden
open and drain *canned chicken
add chicken to sauteed onions
cube one brick of cream cheese
add cream cheese to chicken and onion
season with garlic salt (we can't cook with out it) and pepper she looooooves to cook
spoon enchilada sauce into bottom of dish
heat tortillas 3 at a time for 1 min in microwave (this makes them soft)
work quickly filling the tortillas with chicken mixture and a little cheese
roll and lay in pan (btw we like white corn tortillas but they all work)adorable video demonstration by J

repeat until pan is full add sauce on top
sprinkle with cheese
bake @ 350 for 30 min serve with a yummy salad and a smile

* this recipe is also amazing with leftover rotisserie chicken. We use canned chicken a lot just because we always have it on hand and it is still soooooo good. Try it your family will love it!Photobucket

Get It Straight

yep...the transformation has begun

seriously....she was cute before and still totally cute now but Big Daddy needs to get a shotgun ready cuz in about 2 years when the braces come off and the glasses get traded in for contact lenses we are in BIG trouble! (Especially when I get my tweezers on those fabulous eyebrows of hers)
Jordan is taking it all in stride. She has been wanting braces for a long while, and I will admit we put it off longer than maybe we should have and we already miss that goofy smile. She has been REALLY diligent in caring for her new braces and we hope it continues. She got them put on this last Thursday July 23. Pain for the first day but it got better as the weekend approached.
The glasses she has had for about a month now. She says the funniest things now and then like. "It's crazy to think about everything I have been missing" and "I never noticed how sharp grass looks" and "I am glad I can find shapes in the clouds now".
Now truth be told this vision loss was brought on by a growth spurt (according to the eye doctor), the girl hasn't been walking around blind for 13 yrs...she gets her eyes checked every year....soooo she is exaggerating juuuust a little bit, but I understand what she means.

Randoms 'round Here...

I haven't even had a chance to go through my vacation photos. I swear it has literally taken me a week to get back in to the swing of things here at home. I may as well have been gone a year. I missed my little family so much, everything has been put on the back burner and all I want to do is smooch on my husband and soak up the awesomeness that is my kid.

But it is seriously time to get back to reality. Good thing my reality is pretty fabulous or I would be kicking and screaming!

It has been sooooooo HOT here!! ALMOST too hot to even go into the pool. I spend my days pushing the cooler button on the thermostat...I am so skeeeerd for my electric bill...and of all the Green Mommies looking down their noses at me. I am bad, I admit it...I DO recycle, I DO use reusable bags at the market and I don't litter...but mama needs her AC baby...shweaty ain't cute on me...ok?

The swimming pool is more of a blessing than a curse so I will count those blessings...as I fold the towels...including the ones that are still in the dryer!
PS if you live close by come swim...seriously it's a shame the pool is not used MORE!

These Are A Few Of My Favorite Things

Kasey the creator of Friend Makin' Monday is on vacation so she asked me to host this week...and I am excited. First of all BIG props to Kasey for coming up with a new topic every week, this is no easy task...I decided to stick with what I know...I am sorta known around the blogosphere for Mamarazzi's Favorite Things Swaps...so today's task is:

One Fish, Two Fish, Dead Fish, FLUSH FISH!

First of all..wow on all of the comments from my "Baby Anyone" post...trust me it was surreal, but I am kinda hoping she is on my flight home too...maybe this time I really will end up with a free baby...tee hee.

My folks decided it would be fun to buy some little goldfish for the girls to enjoy while here on their visit...hmmmm....not so much. Sometimes even the best laid plans just don't work out like you think they will....
Today is my last day of vacation (i have sooooo many pictures to sort through and blog). I fly home late tonight. I have had a great time visiting with my family, soaking up the goodness of these darling children and playing with my sister. It's been fun hanging out with my folks and also seeing my brother and his cute wife for a little while too. We even got to see some of our cousins and their families. Yep, it was a good visit filled with lots of family goodness.

I REALLY missed Big Daddy and Jordan. I cannot wait to be home with them again...Big Daddy is that one person in my life that i prefer to spend time with and I can hardly wait to be with him again. Thanks honey for letting me run away from home for a few days...I am done now.

Baby Anyone?

I arrived at San Jose Airport about an hour and a half before my flight was scheduled to leave. I always like to arrive early giving myself plenty of time for going through security and sitting around to people watch. The airport is the best place for people watching. Plus Big Daddy had to go to work that night and still had to get home and get dressed before making his commute.

Not long after I found my perfect spot for people watching they announced that my flight would be delayed an hour. SUHWEET...more people watching AND time for a big delicious diet pepsi, over ice, in a cup, with a lid and a straw, the best way to drink it (coulda been made even better if it had been delivered to me by the hubz...but still yummy). So I got my drink and found an even better spot for people watching and settled in.

I was sitting there having casual conversation with a few others waiting for our flight when a frantic woman carrying a screaming (almost purple) infant and dragging a 3 yr old behind her came up to me and shoved her baby at me and said, "You look like you know what to do" and walked away. (yes really)

I looked at the people around me for confirmation that what had just happened REALLY did just happen. Then went to work calming down the screaming infant in my arms. She calmed down right away and turned into the most beautiful pink little girl. My guess was that she was about 4 wks old. I began looking around for mom, then decided to update my facebook status...this was far too good not to share. Surely she would be back soon, in the meantime I could have a good laugh over the insanity of it all with my friends. I then started talking to my husband "Forget about Colorado, i just scored a newborn baby girl, meet me in luggage claim...STAT!" we laughed a little saying this would make the best movie of the week ever...you know couple who wants a baby actually has one handed to them in an airport..AND she is darling, and SHE is a GIRL!!

And they all lived happily ever after....awwww

Oh ha ha ha...it was all so funny....

until...10 minutes passed...

hmmm...wait is she coming back?

The comments on my facebook status were rolling in and they were all changing from oh that's crazy to wait, what? this is insane!! and suddenly the reality of the situation hit me. I mean really who does that? Just hands off their infant to a total stranger and is gone for...OH 25 min now.

I am now looking around for security...I mean really. I am giving her 10 more minutes and then I am going to call the cops.

33 minutes later she comes strolling back with her toddler in tow....

Crazy Lady (CL): Oh my gosh it was horrible he had a major poop blow out it was up his back and all the way down to his toes and socks, Oh it was so gross! I had to bathe him in the sink and then find someone to get our luggage.
Me: (still holding her baby) oh no...
CL: yeah and then they told me I couldn't get my luggage and I had already thrown away his clothes and just had his sweatshirt wrapped around his waist.
Me: (STILL holding the baby) oh wow...
CL: so then they told me they could look for something in lost and found so that took forever.

Me: (STILL holding HER baby) yeah you were gone for a long time...
CL: uh yeah tell me about it. But they finally found some clothes and then he didn't want to put them on so I had to bribe him and that took forever.

Me: (still holding her BABY) yeah, wow I was getting worried. I was starting to think you weren't coming back.
CL: (laughs) oh yea could you imagine?
Me: (still holding her baby) umm yeah it was starting to feel surreal, I mean who just hands their baby off like that, I coulda been some nutcase or something.
CL: oh no, I looked around for a long time to find someone who looked safe, I knew you were safe, I just knew it. And look I was right.
Me: (still holding her BABY) Yeah, but you don't know how bad I want a baby. I was telling my husband to meet me at luggage claim.
CL: oh hee hee (finally reaching out for her baby)
Me: (handing the baby over to her) Yeah...good thing you came back when you did.
CL: oh, yeah...hee hee...OK well thanks.

I managed to snap a quick picture of her on the plane (oh how I wish I had thought about taking a close up of this beautiful baby, perfection)...YES she was on my flight.
So yeah, no free baby for me...and it was a very bizarre situation, very bizarre. I mean really, this sort of thing only happens to me.

Tiny Bubbles

I arrived to Colorado with a suitcase filled with little wrapped presents for these little girlies, Reese and Quincy, and their new baby brother Corbin. One of the MANY little presents was BUBBLES!! OH the goodness of bubbles...I forgot how much fun bubbles are and how much fun it is to watch little ones delight in them.

I am having so much fun. I could sit and just watch these kids play all day. We don't need any big plans or huge outings, just the sweetness that is these children...and I am happy. I am soaking up the new baby freshness of baby Corbin.

I do miss Big Daddy and J...but I am thankful that they let me run away from home for a week. I am also thankful that my mother in law is there to help make sure they are taken care of for the next few days.

Red, White and Blue Swaptastic!!



It seriously thrills me that there is Red, White and Blue goodness showing up on women's doorsteps all over the United States this week. Today MY package arrived from the ever so wonderful Pam of Screaming Mimi .


This is what she sent...

2. A cute little WHITE puppy (J already stole this)
3. RED Pomegranate lotion...smells divine!
4. RED, WHITE and BLUE container of Rose balm, can't wait to try this.
5. Cute BLUE purse shaped note pad...already in my purse.
6. Yummy smelling RED Tulip tart...the whole package smelled so good!
7. A darling BLUE and WHITE necklace and earring set.
