Cooking with Jordan! #23 Chicken Enchiladas on the Fly

Time for another episode of Cooking with Jordan. I cannot believe the last one was in MAY...I have a few ready to make into posts but who has the time for blogging these days...not me. But J was asking about her Cooking with Jordan Episodes so I will make time for her...and her fans.

The whole point of the cooking lessons for J is to show her some basic easy meals, teach her how to plan a menu, learn how to follow a recipe and help her become more comfortable in the kitchen...this is not anything totally gourmet or culinary school worthy. We hope you enjoy Cooking With Jordan and try these recipes with your kids. They are totally J approved!

On today's menu Chicken Enchiladas on the Fly...this is most def a go to pantry meal. Easy and delicious. I always make enough for two pans, separate them by twos into Ziploc bags and freeze them...they reheat beautifully and are perfect for a quick lunch or do it yourself dinner nights.


Chicken Enchiladas on the Fly

Chop one oniontry not to CRY...she had tears streaming down her face
saute onion in TB of Olive Oil until golden
open and drain *canned chicken
add chicken to sauteed onions
cube one brick of cream cheese
add cream cheese to chicken and onion
season with garlic salt (we can't cook with out it) and pepper she looooooves to cook
spoon enchilada sauce into bottom of dish
heat tortillas 3 at a time for 1 min in microwave (this makes them soft)
work quickly filling the tortillas with chicken mixture and a little cheese
roll and lay in pan (btw we like white corn tortillas but they all work)adorable video demonstration by J

repeat until pan is full add sauce on top
sprinkle with cheese
bake @ 350 for 30 min serve with a yummy salad and a smile

* this recipe is also amazing with leftover rotisserie chicken. We use canned chicken a lot just because we always have it on hand and it is still soooooo good. Try it your family will love it!Photobucket

mmm this made me crave the corn tortillas I have in the frig. I'm thinkin' chicken avocado tacos tomorrow night.

Yum. I like how she's smiling in all the pics. Cute. :)
You know I had my friends over last Sat. for a Girls Night In. And we cooked a dinner together. They freaked out about the chicken in a can I had to add to the quesadillas. They had never heard of chicken in a can and got all grossed out when it smelled like tuna. LOL Glad I'm not the only one that digs the chicken in a can. It's good. And quick and easy. :) Def. a go to!

I always use canned chicken in my enchiladas too. It is just so much more convenient than having to remember to defrost chicken and then actually have to cook it.

She needs the onion goggles. I have a pair of swimming goggles in my kitchen drawer. I get teased a lot (hubby and the boy think I look silly), but I never tear up when I cut onions!

I love doing chicken enchilada's but never thought of doing it with cream cheese. I will definitely be trying this recipe.

Glad to see J cooking again! I know they are meant to be easy so she can learn, but that's why I love them - cause they are easy. And you guys seem to love chicken as much as we do!

YummY! you know what...when I wear my glasses to cut onions I cry too...but if I wear my contacts....NO TEARS! I learned once that the contacts block someting that makes you tear up when you cut onions....funny huh....

Enchiladas turned out great! My hubby bought the red ench sauce, which ended up tasting fine. We might add a bit of kick to the mixture next time (green chilies or jalapenos), but we will definitely be having this one again!!!

Great recipe and I love chicken in a can. It's great to make a quick chicken salad! If you refridgerate your onions, you won't cry when cutting them up! I look forward to the next recipe!

I have to say that I've made this a few times and love it! Thanks for the recipe, it's super easy. I like to add olives and (this might sound weird) but cut up bell pepper. So thanks for a great tutorial!
