Cooking with Jordan! #19 Beef Pot Pie w/ Corn Bread Crust

Time for another episode of Cooking with Jordan. We hope you enjoy Cooking With Jordan and try these recipes with your kids. They are totally J approved!

Today Beef Pot Pie w/ Corn Bread Crust. This is another throw it all together quick pantry meal. We love those. Jordan REALLY loves corn bread so we decided to try it out as a crust, the result? Deeeeeeeelicious!

Beef Pot Pie w/ Corn Bread Crust
fill bottom of dish with beef from cans
chop those veggies
mix and season veggies with lots of pepper and a little garlic salt
steam veggies in microwave for 5-7 min
(we use a wet paper towel over veggies to steam them)
pour steamed veggies over beef
mix cream of celery soup...
together with beef broth and 5 lrg spoonfuls of flour
pour mixture over veggies and beef
mix box of corn bread as directed
just make sure not to get egg shells in the mix (oops!)
blend corn bread mix
cover pot pie with corn bread mix
bake at 375 for 45 min
serve it up and enjoy...mmmm!

Beef Pot Pie w/Corn Bread Crust
3 cans beef
1 can beef stock
1 can cream of celery
1 can potatoes (sliced)
4 stalks of celery
1 cp chopped carrots
1 cp frozen peas
1 pkg corn bread mix
1 egg
1/3 cp milk
5 large spoonfuls of flour

Jordan sure is quite the little cook! That's so awesome! Abby seizes every opportunity she has to assist me in the kitchen. Here lately, she's even made some things all on her own. It really makes for some great memories!

I will definitely have to give some of Jordan's "specialties" a try...that casserole looks like a "keeper"!

It FEELS like a beef pot pie kind of day around here. Raining! (at least it's not snowing or "icing")
Anyway, do you still have your S'more maker? We did an FHE about a year ago that J would LOVE where we made S'mores (yes, I went out and bought me a s'more maker after that afternoon where we ate smores and gooey butter pumpkin cake and watched movies all day long)

and then talked about some of the things we should be doing "s'more" of, and made a cute little poster with the word SMORE written down the left side of the page and then for "S" we put Scripture Study
"M" was Meals together at the table
"R" was Romance each other with more date nights...etc. We had to get a little creative, but the word game was fun, and made it even easier to remember the things we are working on as a family. Anyway, I'm not sure exactly WHY I thought of that particular FHE, but I know J would LOVE it! Thought I'd share.

Love you! Keep practicing those dinners J, so you can cook for me when you come! I'll supply ingredients...you do the work, girl! Maybe you can teach Reese (ahem or Aaron) how to cook too!

Does Jordan take requests? I have an eggplant in my fridge and I really don't feel like eggplant Parmesan.. what else sounds good to make with it?

Oooh! I LIKE the idea of the cornbread crust! We often do a stuffing topping. Very yummy too!

That sounds fabulous! We love pot pie - I've never thought of trying the cornbread as the crust. My son LOVES LOVES LOVES cornbread . . . he and I will totally be making this sometime soon.

We made this last night after reading your post and we loved it, my girls helped and it was super yummy goodness for dinner. my husband was impressed too. Something new is always fun.

I substituted canned turkey for the beef as I am not a huge red meat person. It was divine. Thanks again. you are the bomb. Love your guts.

mmmm looks good except for the peas. i think it would be good with some chopped sausage, too, for more bite. What do you think?
