Cooking with Jordan! #16 Chicken and Dumplings

Time for another episode of Cooking with Jordan. The whole point of the cooking lessons for J is to show her some basic easy meals, teach her how to plan a menu, learn how to follow a recipe and help her become more comfortable in the kitchen...this is not anything totally gourmet or culinary school worthy. We hope you enjoy Cooking With Jordan and try these recipes with your kids. They are totally J approved!

Today's recipe is a family favorite and is soooo easy. Chicken and Dumplings is perfect comfort food for a chilly winter day. It brings up happy childhood memories for me, back to the days when my mom cooked up yummy stuff for us kids on a shoestring budget.

Chicken and Dumplings
2 cans Chicken Broth + 2 cps water
2 cans cream of chicken soup
grill 6-8 seasoned boneless skinless chicken thighs
of course you can also do these in a skillet
mmm we love pepper
chop celery about 5 stalks
carrots about 2 cups
add veggies to simmering soup and raise heat to high
add 1 bag frozen peas
season with garlic and herbs
fresh ground black pepper
cut grilled chicken into bite sized pieces
add chicken to soup and veggies
allow to cook for about 10 minutes
(longer if chicken is not cooked all the way)
make dumplings using 2 1/2 cps Bisquick mix
season mix with lots of pepper and a little garlic saltmix in 2/3 cup milk (makes a sticky biscuit texture)
drop by spoonfuls into boiling soup. turn off heat
allow dumplings to cook in covered pot for 10 minutes.
Mmmmm so good! Serve it up with L-O-V-E!
Chicken and Dumplings
6-8 boneless skinless chicken thighs
2 cans chicken broth
2 cups water
2 cans cream of chicken soup
4 stalks celery
2 cups chopped carrots
1 sm bag frozen peas
2 1/2 cups Bisquick mix
2/3 cup milk
garlic and herb seasoning
garlic salt
black pepper

Looks good - may have to make this one for dinner tonight. I know it will be a "diner" at my house now that my son is home from school.

When I plan for him to be with us for dinner - well something always comes up. When I decide its going to be pick your own leftover - he wants something and leftovers ISN'T it.

This looks pretty easy and fast, but still tasty.

That's how I make my Chicken 'n Dumplings! I leave the peas out though - eck! I think it's great that she is learning to cook. Nobody ever really taught me, I learned by watching my Grandmother. Knowing how to cook a good meal is a powerful skill!

Aw I remember eating this as a kid. I don't think I've had it since, but I bet aaron would love it. Anything with Bisquick is a friend of his.
Then again, anything with a vegetable is an enemy.

I don't normally use bisquick, but I will have to remember that tip in case I'm feeling lazy.

Chicken n Dumplings are on the menu for tomorrow night. I saved half the broth and half the chicken the last time I made it so all I need to do now is make the dumplins. I actually make a dough and roll mine out...it's a little more labor intensive but hubs appreciates it.

Oh my goodness, YUM! I wish my family ate this kind of stuff. Well, I wish they'd eat anything even SIMILAR to this! I LOVE chicken and dumplings, but it's so hard to make just a single serving, lol. I think I'll have to try to make a single anyway, though, 'cause this post makes me want some!

What a great lesson for her! I love chicken and dumplings. My favorite ones are the ones my mom makes from scratch. I'm going to have to get her to teach me someday, maybe sooner than I think.

Yummy, comfort food! That is a great idea to teach your kid to cook. I'm haphazard at teaching mine to cook - I love that you are deliberate about it. I should do that too.

I've grown to love your Cooking with Jordan posts. I think it's wonderful that you're teaching her skills of how to cook for herself and her own family someday, plus, she's having fun now and sharing the knowledge! My daughter loves to cook too and loves to try these recipes! She doesn't think she would like chicken and dumplings, though. I want her to make this anyway and see!!!

Mmmmmm that looks wonderful!

Your daughter has an absolutely awesome smile! She really reminds me of one of the girls who I grew up with. She was really a beautiful soul and had this smile that lit up her entire face.

I can't recall if it was during Mia Maids or Laurels year, but her dad was transferred to London and we lost touch with her. I've often thought about her and after seeing pics of your daughter she was the first person that came to mind!
