Cooking with Jordan! episode 5 Buffalo Chicken Bites

Time for another episode of Cooking with Jordan. The whole point to the cooking lessons for J is to show her some basic easy meals, menu planning, following a recipe and to help her become more comfortable in the kitchen...this is not anything totally gourmet or culinary school worthy.
Spicy Buffalo Chicken Bites
create breading with fiber one cereal, pringles and spices
dip in sauce, dip in breading and bake

J is CRAZY for Spicy food!

Preheat oven to 375 degrees.
1. make a breading using Fiber One bran cereal (original), and Pringles Light Fat Free Potato Crisps, Barbecue flavor...season with a little garlic powder and black pepper.
2. cut chicken into nugget sized pieces.
3. dip nuggets of chicken in Frank's RedHot Original Sauce.
4. roll in breading
5.Lay the battered nuggets on the baking sheet.
6.Place in the oven, and bake for 10 minutes.
7. Then flip the wings over, and return them to the oven for 10 more minutes, or until outsides are crispy and chicken is cooked throughout.

We liked our chicken tossed in a salad with either ranch or blue cheese dressings. Jordan and her BFF Emma liked their salad on the side and dipped their nuggets in dressing. We were ALL really surprised by not only how easy this was to make but by how yummy AND crispy they were. It felt like we were eating a REALLY naughty deep fat fried food...try it, i bet you like it too (and be sure to let me know if you do)!!

It sounds really good. I like how you use the fiber cereal. I need to remember that. My kids don't do spicy so I'll need to adjust the recipe a little. I'd eat it that way, though!

Alright, so this sounds SUPER YUMMY as I LOVE chicken and I love spice. I'm gonna have to find the Hot Sauce you used. I was so excited to see you could have 5 nuggets for only 3 WW points, YAY!! I'm gonna have to head to the store and get the ingredients and let you know how we like it. I'm thinking it could possibly be good with some rice?

I didn't make them tonight because I didn't have the right cereal and I bough regular Pringles instead of fat-free, but I'm definately making them tomorrow! I'll let you know how they turn out!
