Cooking with Jordan! episode 1 One Dish Mexican

April is here and i am WAY behind on my blogging. You might remember THIS post where i explained (bragged) how Jordan asked me to teach her "things" to help her "prepare to be a good mom someday" (i know, awww)! Well, we started with cooking and she made dinner for our family for 5 of the 7 nights she was on Spring Break. I took so many cute pics and have so many easy and delicious recipes to share with y'all that i decided that April would be a good month to start a new weekly segment here on TheVasquez3 blog (and today is my birthday and Jordan is one of the most precious gifts in my life, so it feels right). So i proudly present, Cooking with Jordan!

my feelings we not hurt in the slightest when Jordan chose her Aunt Meg's (my baby sister) Mexican One Dish Casserole for her first meal, to cook for the family. It may sound a little YUCK to you, but trust me..it's pretty YUM and kids LOVE IT! Jordan's BFF Emma was here for a sleep over and joined in the fun.

Mexican One Dish Casserole



brown minute rice, Hormel Beef Tamales, Hormel Chili w/ beans,
salsa (whatever you like), shredded cheese and corn chips
drain and peel Hormel beef tamales
slice tamales into 1 inch pices and line the
entire bottom of casserole dish with them prepare 1 cup (2 cups when cooked)
brown minute rice as directed.
add one cup salsa and 1 can of chili
(with beans) to cooked rice
pour rice mixture over the tamales
sprinkle with cheese and heat until cheese is melted
serve over corn chips and enjoy
it's a good idea to serve this with a green salad (ya know, if you are a good mom like that, clearly i was lacking this particular evening, i have been wondering where my Mother of the Year award was...hrmph). if you need or want more detailed directions email me for the full recipe.

Hey, I know you were kinda joking about the scrapping thing where you send me pictures and supplies and I send you back completed pages, but there's something to that idea that appeals to me. If you're serious, I I'd like to try what you're talking about at least once. I think it would be fun. Let me know if you think that might be a real idea!

That's so neat that she wants to learn and do those things with you, and even better that you do it. So many parents these days brush their kids off. I can't wait until my girls want to do things like that with me. Now I prefer to bake but we can start there right. Dessert's rightful place is first!

Happy Birthday! How wonderful to be cooking with your girl. My son took some cookbooks out of the library this week and started menu planning, so I better take him to shop and get him cooking!
Dinner looks yummy, but I can't read the little font! I must be getting old:)

You are such good and patient mom. MA always wants me to teach her to cook. I try, but I get frustrated easily. Now that she's older I'm getting better but I have a hard time letting her do it without taking over. You know, my way is the right way and I'm so much faster at it. I'll have to try out the recipe sometime!

I MISSED your birthday?? I am so sorry-I hope you had a wonderful day. We are on the second bout of the chicken pox and life is hectic here. I haven't hardly been reading or commenting. But I needed to some tell you a) Jordan is adorable and I want her to come cook for me (and my son *wink* *wink*) and b) Happy Birthday Friend!!!
